Nuts / Pecans

Nuts are great snacks when you are on the run. Try some of these recipes.
Honey-Glazed Pecans
Prep 10 min |  Total 29 min
1 cup Pecan Halves
1/4 cup honey
(Dash of ground red pepper {Cayenne})
Cook pecans, honey and peppers in skillet on medium-high heat 4 min or until mixture simmers and is foamy.
Spread onto greased baking sheet, seperating slightly with fork; cool completely.
Serve in bowl for snacking or add to your favorite salad.

Toasted Nuts


1 c. Pecans                            salt
2 T. Butter
 
Saute pecans in butter in skillet for 5 minutes or until crunchy. Drain on paper, sprinkle with salt. (If you want to spice them up some, sprinkle with a little curry or chili powder.)

Date and Nut Chewies
 
2/3 C. Sweetened condensed milk
2 t. vanilla
1/8 t. salt
1/4 C. powdered milk
1/3 C. wheat germ
3/4 C. chopped dates
3/4 C. broken pecans
 
Stir condensed milk, vanilla, salt, powdered milk, and wheat germ until thoroughly blended. Then add the dates and pecans.
Mix well.
Use a teaspoon and drop cookies onto a cookie sheet.
Bake at 325 for 15 minutes.

Orange Delites
 
1/2 c. butter                                     2 - 1/2 c. flour
1/2 c. vegetable shortening                1/4 t. soda
1/2 c. brown sugar                            2 T. orange juice
1/2 c. white sugar                             1 T. grated rind
1 egg                                               1/2 c. pecans
 
Combine all ingredients and mix well. Drop onto a cookie sheet. Bake at 375 for 10 minutes.
Pecan Puffs
 
1/2 c. butter
2 T. sugar or honey
1 t. vanilla
1 c. ground pecans
1 c. cake flour
1/4 t. salt
 
Cream butter and sugar. Add vanilla and nuts. Work in the flour and chill the dough.
Form walnut size balls and place them on a ungreased pan.
Bake for 30 minutes at 325.
Remove from oven immediately and roll in powdered sugar.
Cool and roll again.
Makes 3 dozen.

Cranberry Crunch
 
1 c. cranberries                        1/2 t. soda
1 c. pecans                              1/2 t. salt
1/2 c. butter                             2 T. water
1-1/4 c. sugar                           1/2 t. orange extract
1 egg                                       1/2 t. almond extract
1-1/2 c. flour
 
Chop cranberries and pecans.
Cream butter and sugar.
Add egg and beat.
Sift the flour, soda and salt.
Combine with cream mixture. Add water, orange extract, and almond extract.
Drop cookies on a greased cookie sheet.
Bake at 375 until done.
