Qty1 - 3 1/2 lb. Chicken
1/4 c. chopped onion
3 cloves of garlic, chopped
5 tbsp. chopped green pepper
1 tsp. parsley flakes
2 tsp. butter
1 tbsp. flour
1 lge. can tomatoes
1 tsp. salt
Pepper to taste
1 bay leaf
1/2 c. white wine
Cut the chicken into serving pieces.
Brown in a small amount of fat in a skillet, then remove from skillet.
Saute the onion, garlic, green pepper and parsley in remaining fat in the skillet until tender.
Add the butter and flour and cook, stirring, until brown.
Stir in remaining ingredients.
Add the chicken and cover.
Simmer for 1 hour and 30 minutes, stirring occasionally and adding water, if needed.
